Today is over ... Saffron infused Risotto

Good evening to everyone.  I really don't have too much to report today as we were in the class room all day doing book work and getting ready for finals in 2 weeks from now.  I don't think that you can ever be ready enough for finals ... what do you say about that?  I my self know that I need all of the help that I can get from any source to help me through the book work and math part of this class.  This is not that big of a part of the final grade so I would probably pass without too much trouble but I want to do better than just pass so that is why it is so hard for me.  I read the book and the next minute I don't know what I read and I do the math and the same thing happens ... my mind just goes blank.  It didn't have to think for such a long time that now it must be on strike or something.  Any how there is a special credit class tomorrow from 10 AM - 1 PM on Culinary Math ... so, I feel that is one that I can't afford to miss so more than likely I will be there trying to learn what seem impossable for me.  So, not to much to report for now so have a really great evening everyone.  Signing off from 2HappyChefs for now.

Hello everyone, hope that your having a really great Wednesday.  Sorry that it is so HOT ... for some of us this is just miserable weather.  Overall better than snow and rain any way you look at it but never the less pretty hot with the humidity.  Enough about the weather ... today was Veal day.  The picture that you are looking at is Osso Buco with Saffron infused Risotto.  All in all still a very confusing day.  Some of the people in class work and some do not work and then the ones that do work do it all and get criticized for it ... I am not sure any more what he wants us to do but as I was just telling my mom on a recent phone call that we only have 1 more week of cooking and then we have finals the next week so there may be a new Chef instructor in our future right after mid-term break.  Our Chef that we have now is very nice and very knowledgeable but I don't think that he is handling the class properly.  I am not an instructor so what do I know ???? Nothing but it seems like it could be easier for all of us.  Any how enough for now .... have a really great evening.  Signing off from 2HappyChefs for now.  Will write more tomorrow with more news.

Tuesday and still a fishy day.

Good evening everyone.  Today was OK if you are into fish type things to eat.  I am now but everything did look very good.  I did try some shrimp and it was not bad but I liked the chocolate pudding much better that is for sure.  Tomorrow is Veal ... I do not like that either so needless to say I will be happy when this entire week is over.  I think that there are much better things that we could be cooking ... but who am I to say ... I am just the student, right?  Heidi got back her ServSafe test results today and she did very well ... a little better than even her big sister ... GOOD JOB HEIDI ... Fish Day today

Good evening to everyone out there.  Today was fish day ... a day that I didn't really like much because I don't like fish but I had to clean a part of a monk fish and it was slimy and slippery but I got through it. And then I had to grill some salmon and they say (whose of who ate it) that it was delicious.  So, that was pretty good news ... I grilled fish, yea!  Today also I got my test results from the test that we took for ServSafe and I passed and that is very good news.  Tomorrow we are still on fish type stuff with clams, oysters and that kind of thing.  Well, so I am very tired and ready to fall into bed but I just wanted to catch you up before I did that ... so, hope that you all have a very good night and I will check in again tomorrow.  So, over and out from 2HappyChefs ... sweet dreams everyone.  The picture is the salmon that we had to skin to grill.  Sorry there are up-load problems right now that they are working on so you will have to see the fish tomorrow.

I am sorry that I have not been keeping up with this as I should be.  Not only is it fun to write about what we are doing in school but there are many exciting experiences that I need to share.  This week should be one of them as it is Fish week.  I promise that I will take my camera and take pictures and start getting back on track and writing and sharing with you everyday.  Please come back starting tomorrow and reading what we are doing.  This week should be good with Fish and Veal on the menu ... either of which I have no interest in.  I will cook what ever they want me to but I will not eat any of it.  This week would be the week to start a diet ... I don't know what the other 2 classes are cooking so there might be something to eat but this is becoming a really bad habit ... eating at school.  I need to get back on track and this seems like as good as week as any.  I still am a little nervous about the ServSafe test that we took a week ago Thursday ... it was a total surprise with no preparation.  I hope that I pass and get certified and that will be one thing under my belt not to worry about ever again.  Well I am starting to get tired and I am going to try and get some sleep as I have to be up at 6AM.  So, sighing off for now from 2HappyChefs.   Hope that your weekend was a wonderful one ... will write more tomorrow ... good night.

Fish and Veal week ... isn't he a thing of beauty?

Good morning to everyone .. another sleepless night for me. I just can't figure it out why I have trouble sleeping on Sunday nights ... any idea's? Today we are doing Fish and Veal ... 2 of my least favorite foods. We only have 2 more weeks in this Mod and then we get a 10 day break before we start the new one on 7/5. For Heidi and I we still are going strong with perfect attendance and "A's". We have got into some pretty hard things and did OK but I have a feeling that it is only going to get harder from here on out. Good luck to us!
