Week 7 and moving right along ...

Good afternoon everyone.  Hope that everyone is doing well.  I am sorry that I have not written in a while but there really wasn't much to write about because last week was Mid-term week and practical tests on Sauces and Knife Skills.  Two written exams and two real hands on exams ... Heidi and I both did quite well ... actually according to the Chef most did well on everything.  Yea team!  Now moving on to this week (week 7) ... On Monday we did Quick Breads, and on Tuesday we did Yeast Breads and today we did Pizza ... Pizza .... Pizza .... it all was very good.  Between the entire class we made about 11 pizza's ... Thin  Crust, Margarita Pizza, Chicago Style Pizza, Grilled Pizza, Deep Dish, Braided Pizza, Calzone and Stromboli.  Table 1 or Team 1 made the Stromboli and a Deep Dish Pizza.  The Stromboli was incredible and the Deep Dish wasn't too shabby either but when we took it out of the deep dish pan it didn't come out right and 1/2 of it fell apart ... but we put it back together and I have to tell you it didn't taste any different ... it was very good too.  So, as you can gather from this writing that this was not a week to be on a diet ... no-sir-eeee!  There won't be much to report tomorrow as we are in class all day and we will be getting our 6 week review and working on the ServSafe exam.  So, all of my fellow readers have a really good evening ... 2HappyChefs over and out for now.  I will write again tomorrow with some pictures.

Happy Mother's Day!

Happy Mother's Day to all of the wonderful mother's out there.  I wish them all the best and a very happy day enjoyed with loved ones.  Just a short note today, school is becoming increasingly more difficult as time goes buy.  So in the spirit of getting through it with perfect attendance and straight A's (or very close to that) I am here by getting rid of all other distractions in my life.  Even the ones that keep coming at me on a daily basis that I can not control ... form now on I will just let them happen.  I have spent too much time worrying about things that I neither have any control over or can change.  What will be will be and so I am moving forward from today with only doing well in school on my mind.  I realize that this is much easier said than done but with all of the homework and tests coming up that should take up most of my waking hours and leave very little time for worry about other things.  So, in the spirit of Mother's Day I am taking a break from worrying and I am going to get smarter and pass this with flying colors.  Signing off for now from 2HappyChefs ... It was a very busy week

Good morning to everyone out there.  Hope that everyone has a wonderful Mother's Day tomorrow.  I don't have much to report except that it was very busy last week at school.  They were hosting a ribbon cutting ceremony yesterday so all week was all about preparing all of the food for all of the big shots that come in to see the school.  Heidi and I got a kind of nice treat yesterday.  We both got their early so we could help with the preparations and we had the pleasure of working with Chef Milos Cihelka.  It was such a pleasure working right along side a renowned Chef such as himself.  He was very nice and very helpful.  Heidi's job was to make toast points with seared salmon steak and a guacamole rose on the top.  They turned out very nice ... I forgot to take pictures of the finished product.  My job was to make a savory Neapolitan with Brunoise vegetables mixed with Bechamel and cheese to hold it together.  I had to layer 4 layers of puff pastry with the filling in between the layers and then cut very carefully into bite size peaces.  I also forgot to take a picture of this finished product but I did taste one and they were very good.  Next week there will not be much to report as it is mid-terms, knife skills test and more ServSafe information for that up coming test.  So, signing off for now from 2HappyChefs.  Have a really great weekend!

Good day to everyone out there on this "going to be later" beautiful day!  It will be a nice one before the start of next week and the grind of school to enjoy.  Today is just more Culinary Math for me.  I am having a very difficult time with this.  Sure I can look the answers up on the Internet but we don't have access to the Internet in school so I need to find a way to work it out with a calculator (which we can use in school).  I don't know why my mind is so blocked off to learning math.  Here is something I can share with you all so you can see just how difficult this has been for me ... Here goes,  the question was how many pounds does a gallon of milk weigh?  I don't drink milk so I don't even have a gallon jug laying around to look on to see what it says so the next best thing I can think of to do is email and ask my mother ... she should know, right?  Nope, she drinks milk but not by the gallon so then I get this bright idea to go to the corner store to look on a gallon jug.  Well before I get to the milk I get a cherry pie and other things that I don't need or really want but I am thinking that the cherry pie could really help me with my math problem so then I get to the milk and one gallon of milk weighs 3.75 liters.  So now I have to come home and of course eat the entire pie before I get to work trying to make liters into pounds ... it was so good.  Anyways, after gas, time and money comes to find out that one gallon of milk weighs about 8.50 pounds.  And this is the way this has been going for me from the beginning ... long, slow, hard and in "my mind" very complicated.  So, I will practice again most of the day today and hope that some of it sinks in so I will not fail this part.  Back to work for 2HappyChefs.  Have a really great day and I will be back tomorrow to update you on my progress.
